Try our ramos gin fizz, then discover our English garden cocktail, gin fizz, Rhubarb gin, and cucumber gin fizz.
The ramos gin fizz is a classic New Orleans cocktail and it’s absolutely delicious: zesty, fluffy and creamy, it tastes like liquid lemon meringue pie. It is, however, notoriously labour-intensive, requiring lots of vigorous shaking. This method uses a blender as a shortcut but the result is just as good.

Method
-
step 1
Put all of the ingredients, except the soda water, in a blender with 3-5 small ice cubes and blend until everything is well incorporated and you can no longer hear the ice in the blender.
-
step 2
Pour 50ml of the soda water into a chilled highball glass, then slowly pour in the mixture from the blender until it reaches the rim. Put the glass in the freezer for 5 mins – this will help the cocktail settle and the head to thicken up.
-
step 3
If you have any cocktail mixture remaining in the blender, mix it with a little soda water. Use a straw to poke a hole into the centre of the cocktail, then carefully pour in the liquid from the blender. This should cause the head of the cocktail to rise an inch or two above the rim of the glass so that it looks like a marshmallow. Garnish with a lemon wheel or twist, if you like.
