I like the beans with some bite to them but if you prefer them to be more cooked then blanch in boiling water for 2-3 minutes. Ginger and turmeric in the dressing help to reduce inflammation, speed up digestion and feed beneficial gut bacteria.

Method
-
step 1
Heat the grains following pack instructions and set aside to cool slightly. Heat the oven to 220C/200C fan/gas 7, line a large baking tray with baking paper and spread out the grains to cover two-thirds of the tray. Drizzle over half the oil, then toss the tofu with the remaining oil and arrange on the empty third of the tray. Bake for 15 mins, turning the grains and tofu halfway through.
-
step 2
Meanwhile, put the beans in a heatproof bowl, pour over boiling water and set aside. Stir together all the dressing ingredients in a small bowl until the sugar has dissolved.
-
step 3
To serve, drain the beans and put in a large serving bowl with the remaining ingredients, the grains and tofu. Pour over the dressing and toss together.
