Verna says, "The BEST way to eat spinach? Wrapped in crispy, golden, swirly pastry called burek. Inspired by my recent trip to the Balkans, these spinach and feta burek are ridiculously easy to make at home, with flaky filo pastry and a savoury, cheesy filling. Perfect for breakfast, lunch or a snack… although I could honestly eat these at any time of day 😂."

Method
-
step 1
Sauté the onions with a little oil until fragrant and softened, then add the spinach to wilt. Place aside to cool.
-
step 2
Once cool enough to handle, squeeze out as much excess water as possible with a cheese cloth or sieve. Mix the spinach with the crumbled feta and a little black pepper, if desired. Salt to taste.
-
step 3
Preheat your oven or air fryer to 180C fan. Take one sheet of the filo pastry and brush or spray with olive oil or melted butter, place another sheet on top. Add the filling along one edge and roll into a long log. Coil each log into a swirl, tuck the end underneath and brush the top with more oil or butter.
-
step 4
Brush with egg wash on top and sprinkle on some sesame seeds for garnish.
-
step 5
To cook, either bake it in your oven for 25–35 minutes until golden and crispy, or in the air fryer for 12–15 minutes, checking until golden and crisp.
